Above are a couple of family favorites. First is some delicious corn soup! The next one is baked tilapia with pineapple mango sauce on the side, brown rice, black beans and fried plantains. That's some good eatin'! That handsome young man is my lil Prince. He LOVES both of those meals. Well, except the plantains. He doesn't like those. What's wrong with that kid??

I've been wanting to try plaintains! I can't have them fried (trying to get healthy and de-fat my ass), so do you have any serving suggestions besides frying? I'm really interested in trying them:) Thanks either way! And your little guy is waaaay too cute!
mequet, i also enjoy baked plantains. just take a ripe platain and put it on lightly oiled foil or baking sheet and bake until the outside is golden brown. YUMMY!! if the plantain is ripe it still keeps its sweet flavor. enjoy.
Now this looks like a meal I could get into. And plantains...yummy!
